Method:
Wash dried figs and pat dry them using a paper napkin. Cut the figs into pieces. Take a microwave safe bowl and add chopped figs, water and sugar. Place the bowl in microwave oven and cook on high power, uncovered, for 5 minutes. After 5 minutes bring out the bowl and mash the ingredients using a potato masher or a fork. Again place the bowl in microwave oven and cook on high power, uncovered, for 3 minutes. Remove the bowl from oven and transfer the fig marmalade into a bowl and cool completely. One cooled, place this bowl in refrigerator to chill.
Use this marmalade on toasts as spread or use it as a topping on vanilla or any choice of ice cream or make fig ice cream using it.
Points To Notice:
Observe that it is a simple dish and can be made easily. Here I have used microwave oven to make this marmalade whereas it can be made on a stove top too. Cook the ingredients partially covered in a pan if cooking on a stove top.
Adjust sweetness according to taste.
This marmalade can be made using fresh figs too. Cut figs into pieces and use. But as the fresh fruit is too soft, we would be getting a soft marmalade without any texture.
Observe that after 5 minutes of cooking the figs become soft but not mushy---so even if they are mashed with a potato masher they still retain their shape---here we mash the cooked ingredients to make a uniform mixture.
The marmalade when added in ice creams as topping gives a nice taste of cooked, sweetened, soft figs.
Use this marmalade in making fig ice cream which gets a natural color and design along with a unique taste.
Enjoy !!!!!!!!!!!!!!
