Recipe Text
To make Pani Puri, it includes three parts:
I. Making Pani (Spiced Water)
II. Potato Mixture
III. Making Paani Puri
I. Making Pani (Spiced Water)
Ingredients:
Mint Leaves – 12gms (3/4Cup)
Coriander Leaves – 10gms (1/4Cup)
Lemon Juice – 3/4Tbsp
Green Chilies – 3 (Break each chili into small pieces)
Ginger – Small Piece
Black Pepper – 3
Black Salt – 1/2tsp
Roasted Cumin Powder – 1/2tsp
Salt – To Taste
Water – Around 1/2 Cup (To Grind The Mixture)

Method:
Take a mixie jar and add all the above ingredients and grind adding water to make a smooth paste.
Add 2 1/2 Tbsps of the prepared paste to 660gms (3 Cups) water and mix well. Pour this water into a container and place this in refrigerator to chill. Chill for at least 4 hours so that the spices get mixed well and the water tastes good.Bottle the remaining paste and cover tightly with a lid. Store this paste in freezer.
Before serving strain the chilled water and pour in individual bowl and serve with puris and potato mixture.
II. Potato Mixture:
Ingredients:
Boiled Peeled & Mashed Potatoes – 500gms
Roasted Cumin & Red Chili Powder – 1 1/2tsps
Salt – To Taste (1tsp)
Grated Ginger – 1tsp
Chopped Coriander – 2Tbsps
Method:
Take mashed potatoes into a bowl and add roasted cumin & red chili powder, salt, grated ginger and chopped coriander. Mix all well. The potato mixture is ready to serve with pani puri.
The quantities mentioned here may be used as basic guidelines and can be increased or decreased according to taste.
III. Making Pani Puris (Click here to know how to make Puris for this recipe):
Use crisp puffed puris for making the pani puri. Remember that immediately after preparing, it should be consumed—or—make it just before eating. For making this dish we need:
Potato mixture
Spiced Water (Prepared Pani)
Let us learn making with one puri:
If you observe the puffed puri, the surface of one side will be thick and the surface of other side will be thin. Hold a puri with left hand and make a hole with right hand thumb on the thinner surface. Fill the puri with sufficient potato mixture. Similarly make hole in all the puris and add potato mixture in each puri. Arrange the potato stuffed puris in a plate and serve with a bowl of pani. To eat---dip the potato stuffed puffed puri in the prepared pani and serve immediately. While eating place the entire puri at one go into the mouth and have a bite.
While serving for elders, arrange puris in a plate and serve with a bowl of potato mixture and a bowl of prepared pani. Let them make their own way according to their taste and enjoy. While serving for children fill the puris with potato mixture and serve them with a bowl of prepared pani.
Points to Remember:
Usually boiled, peeled and cubed potatoes are used as potato filling in the puris. But that way the potatoes taste bland. So make the potato mixture as shown above and use it as a filling for better taste. The grated ginger along with the flavor of roasted cumin powder gives a good taste to the potato mixture.
If desired add some chat masala, red chili powder or any spice powder you like to the potato mixture. But the ingredients shown here are sufficient to bring a good taste. Only the quantity of the potato mixture may need to be increased as per requirement.
Make hole in the puri on the thin surface only. The thick surface will hold the pani for few seconds without becoming soggy.
