Method:
Take a deep bowl and add puffed rice, fried bengal gram, fried green gram, fried peanuts, few crushed papdis and mix. To the bhel mix add some chopped onion, chopped tomato, chopped green chili and chopped coriander and mix. Add chaat masala, sweet & sour chutney and chat chutney and mix. Divide the prepared mixture in serving bowls and sprinkle some thin sev and some crushed papdis. Garnish bhel puri with chopped coriander and serve with two or three papdis. Serve bhel puri immediately.
Points To Observe:
There is no specific measurement for making this bhel---all the ingredients are added to taste.
Divide puffed rice into two portions. Heat a deep pan and add few drops of oil and heat oil. Add turmeric powder and little salt to the oil and add one portion of puffed rice and stir to coat well. This puffed rice looks yellow in color because of the turmeric powder and tastes also better because of salt. Mix these two puffed rice’s while making bhel puri to get better flavor.
After adding chutneys and mixing serve immediately or else the puffed rice becomes soggy after absorbing moisture from chutneys.
