Makes: One Cup
Ingredients:
- Deseeded Tamarind – 50gms
- Deseeded Dates –50gms
- Sugar – 50gms
- Water – 250gms
- Grated Jaggery – 75gms
- Salt – 1 1/2tsps or to taste
- Red Chili Powder – 1tsp
- Roasted Cumin Powder – 1/2tsp
Method:
Take
tamarind into a microwave safe bowl. Add dates, jaggery, sugar and sufficient
water to the tamarind and mix once. Place this bowl in a microwave oven and
cover it partially. Cook the tamarind mixture on high power for 2 to 2
1/2minutes. Remove the bowl from oven and cool the contents. Take a mixie jar
and add the tamarind mixture. Add red chili powder, roasted cumin powder and
salt to the tamarind mixture. Grind the mixture well. Take a bowl and place a
fine sieve on it. Take the ground chutney into the sieve and rub with the back of
a ladle. Then we will get a smooth and thick sauce like consistency chutney.
Add remaining water little by little to get a free flowing but thick
consistency chutney. With the measurements given above we will get one cup of
this chutney. Use this chutney in chats, Manchurian or serve with fried snacks
like pakodas and bhajias. This chutney goes well with Dhoklas too.
Points to Notice:
The
measurements given above may be changed according to the interests of tastes.
Some may like the chutney to be sour and some may like the chutney to be
sweeter.
It
goes well with bhel puri, chats etc..
