Preparations:
To prepare this soup we use green pea shells instead of green peas. So it is very important to wash the green pea pods thoroughly. To wash the pods, take water in a basin and add some salt. Dissolve the salt and add the pods and wash them. Discard this salt water and fill the basin with fresh water. Wash the pods again in fresh water thoroughly. Drain them and start using. Break the ends of a pod with fingers and string them to remove fiber. Peel the pod and separate the peas. In this manner, remove fiber & separate the peas and shells of all the pods.
Arrange chopper blade to the food processor bowl. Add the shells and run the processor to get finely chopped shells. Take the chopped shells into a bowl. Peel the onion and cut them into cubes. Add the onion cubes to the chopped shells. Place this bowl in a pressure cooker and cook. After first whistle, lower the flame and cook the shells for 10 minutes. Remove the bowl when the cooker has cooled off.
Crush and powder the black peppers using mortar and pestle.
Method:
To prepare this soup we require some white sauce. Let us learn to make while sauce.
White Sauce:
Heat a pan and add butter to it. When butter melts add maida and fry stirring continuously. Take care not to brown the maida. Fry the maida in butter to remove the raw smell. Take the pan away from heat and add milk little by little stirring and mixing. Mix until well blended. Return to heat and cook on low flame, stirring throughout until the sauce thickens.
Take a mixie jar and add the cooked pea shells. Blend by adding water. Strain this mixture through a large holed sieve and remove the fiber. Add the white sauce, salt and pepper powder and mix thoroughly. If required strain once again. Serve hot topped with your favorite garnishing.
Points To Observe:
Use fresh green pea pods.
It is advisable to wash the vegetables in salt solution before using. While growing vegetables farmers use lots of pesticides. To prevent the harm caused due to these pesticides, wash the vegetables in salt solution and then rinse in fresh water before using.
Break the ends of the pods with fingers and remove fiber to ease chopping.
Adding onion to the soup gives a natural sweet flavor.
Adding white sauce not only gives the thickness but also adds a flavor (KAMMADANAMU) to the soup.
Adjust seasonings to taste.
This soup is made with green pea pods but taste wise no one will believe that this soup is made without green peas. It is less spicy, tasty and healthy soup.
