| Ingredients:
- Potols – 21
- Oil – For Deep Frying
- Salt to Taste
- Vepudu Karam – 5 To 6 Tsps
- Curry Leaves – (Washed &
Dried)
Handful
Vepudu
Karam:
- Coriander Seeds – 5 To 6
Tbsps
- Cumin Seeds – 6 To 6 1/2
Tbsps
- Mustard Seeds – 1 1/2 Tsps
- Black Pepper – 15
- Salt 2 1/2 To 3 1/2 Tsps
- Turmeric Powder – 1 Tsp
- Red Chili Powder – 100gms
Dry
Roast Coriander seeds, Cumin seeds, Mustard seeds and black pepper. You
can
microwave them for one minute on high power. Then powder these
ingredients. Add
Salt, Turmeric Powder & Red Chili Powder and grind it to a fine
powder.
Method:
Wash
and clean potols. Pat dry them with a dry cloth. Cut the ends. Cut each
potol
into two length wise. Heat a pan and add oil to it. When the oil is hot
drop
these potols pieces into it and fry on medium heat. Do not fry on high
flame.
Fry them till you get nice golden color on the white part of the
vegetable.
Then remove them on to a paper napkin or a news paper to absorb extra
oil. Now
fry the curry leaves till crisp in the same oil and drain them on to a
paper
napkin or on a newspaper to remove excess oil. Now crush the fried curry
leaves
and mix with the vepudu karam. Add salt to taste and mix again. Now our
stuffing is ready. Stuff this mixture by pressing a bit, so that the
flavors
get mixed with the vegetable. Arrange these tasty stuffed potols in a
plate and
serve with hot rice.
Point To Be
Noted:
Do
not hesitate to use a newspaper or a paper napkin to remove excess oil.
Instead
of consuming and suffering it is better to throw away that extra oil
this way.
Oil is the main thing which needs to be put under control. Obesity,
Cholesterol,
heart blockages etc… can be controlled by using less oil. But our tongue
craves
for more fried foods. Do not stop it but control it. So eat fried items
less
and have good health.

Please tell me where can we get this Vepudu Karam, in each recipe there are proportions of the ingredients & Vepudu Karam is used for most of the recipes. I don't find this in Bangalore. I actually don't know what is this, so that I can prepare this & use.
