If I have to make a video only before I’m to share these recipes, it is likely to take considerable time. Meanwhile there is also an urge to share these recipes for the benefit of my viewers. These recipes are prepared, perfected and tasted at home. Hence they too carry the same commitment and conviction as in videos, while I share them with you. Recipe Text

Ingredients:

  • Potatoes – 500gms

  • Cumin Seeds – 1tsp

  • Turmeric Powder – 1/4tsp

  • Salt –To Taste

  • Red Chili Powder – 2tsps

  • Oil – 4Tbsps

Preparations:

Wash baby potatoes rubbing between fingers to remove all the dirt. Take the washed baby potatoes into a slotted bowl. take a pressure cooker and add water into it (Say One Glass Of Water). Place the baby potatoes bowl in the pressure cooker and close the lid. Heat the pressure cooker on high flame till full pressure is developed in it. Then lower the flame and cook for 10 minutes. After 10 minutes switch off the flame and allow the pressure in the pressure cooker to come down naturally. Then open the lid of the pressure cooker and remove the slotted bowl. Cool the steam cooked baby potatoes till warm to touch. When manageable, peel the skins of all baby potatoes.

Method:

Heat a non stick pan and add oil to it. When oil is hot add cumin seeds and fry till they splutter. Add the cooked baby potatoes and add salt and turmeric powder. Mix well and cook covered for 5 minutes on medium heat. Remove the lid and add red chili powder. Mix well and cook on medium heat stirring in between. Fry till the potato pieces are crisp. Serve hot with plain rice or serve them as they are with a toothpick in cocktail parties as an appetizer.

While selecting baby potatoes see that th

ey all are of equal shape---then the fry looks colorful even to see with our eyes.

Baby potatoes do not absorb more water while cooking them as they are steam cooked. It would be also easy to peel the skins of steam cooked potatoes. Potatoes also retain their shape when steam cooked.

Salt and red chili powder may be added according to taste.

Serve them at tea time or for a cocktail party or serve as a side dish with hot rice.
