This is a Text Recipe, not a Video. Due to commitments on home front and paucity of time it is becoming difficult to make videos of all known recipes. If I have to make a video only before I’m to share these recipes, it is likely to take considerable time. Meanwhile there is also an urge to share these recipes for the benefit of my viewers. These recipes are prepared, perfected and tasted at home. Hence they too carry the same commitment and conviction as in videos, while I share them with you. Recipe Text

Ingredients:

  • Tomatoes – 500gms

  • Grated Beetroot – 25gms (2Tbsps)

  • Grated Onion – 20gms (1Tbsp)

  • Grated Garlic – 5gms (1/2Tbsp){Grated 4 Big Garlic Cloves}

  • Red Chili Powder – 1 1/2tsps

  • Garam Masala Powder – 1/2tsp + 1/8tsp

  • Bay Leaf – 1 (Small)

  • Salt – To Taste (1 3/4tsp)

  • Water – 20ml

  • Sugar – 40gms

  • Vinegar – 10ml

Preparations:

Wash & chop tomatoes finely---I have used a V-Slicer to chop tomatoes finely. Wash & grate all other vegetables and measure the required quantities & keep them ready.

Method:

Take a pan and add chopped tomatoes, grated beetroot, grated onion, grated garlic, water & salt. Heat the pan and cook the ingredients, covered, on high flame for 5 minutes. Open the lid and add sugar, red chili powder, garam masala powder and cook uncovered on medium flame for 3 minutes. Remove bay leaf and discard it.

Strain the mixture and grind the pulp to a smooth paste using the strained liquid. Strain once again and add vinegar and mix well. Check for spices and add required salt or chili powder and powdered sugar to balance the taste. Cool the mixture to room temperature and transfer ketchup to clean bottles. Refrigerate the prepared ketchup and use it within one month.

Points To Notice:

As we have not added any preservatives ketchup would taste good for up to 3 weeks. I generally prepare in small quantities and use it fresh.

Enjoy tomato ketchup with samosas, braided bread, toasts etc.
