Method:

Take a small spice grinder and add sugar, salt, red chili powder and citric acid and grind to a smooth powder. Here I have added 3/4tsp of red chili powder but add according to taste. Taste this masala powder and adjust seasonings accordingly.

Make popcorn in a popcorn maker. Heat a big kadai and add butter into it. When butter is melted lower the flame and add popcorn and stir fry for 30 to 45 seconds so that butter is well coated on all popcorn pieces and popcorn is warm. Switch off the flame and sprinkle some prepared masala powder and mix. Sprinkle masala powder on the popcorn in small batches and mix to coat on all popcorn pieces. Spread masala popcorn on a plate and cool. Store the prepared masala popcorn in airtight jars and use as and when required.

Points To Remember:

The spices may be adjusted according to taste---the masala coated popcorn should have all flavors like spicy, tangy, sweet and salty.

Do not take un popped or half popped corn---just discard them.

Melt butter and add popcorn and mix and fry on low flame. This allows the butter to coat evenly on all popcorn pieces and the water content in the butter gets evaporated and the popcorn would not turn soggy or soft.

Before adding masala powder to the butter coated popcorn, remember to switch off the flame as the sugar when heated forms a lumpy mixture and does not get coated on the popcorn. Also add the masala powder in batches while mixing so that all the popcorn pieces get coated well with the masala powder.

After mixing the masala powder observe that some powder gets collected at the bottom of the kadai and most of the powder is coated on the popcorn---use that leftover powder in any gravy dishes to spice the curry.

Make fresh popcorn which takes just 3 to 4 minutes and spice it up with masala powder which is freshly mixed and within 10 minutes we get a tasty snack.

Serve the Masala Popcorn to Guests and Children as light refreshments.

Enjoy !!!!!!
