Ingredients:
- Long Grained Rice – 1 Cup
(100ml)
- Potato Pieces – 1 Cup (50ml)
- Carrot Pieces – 1 Cup (50ml)
- Capsicum Pieces – 1 Cup
(50ml)
- Green Peas – 1 Cup (50ml)
- Sweet Corn – 1 Cup (50ml)
- Cashew Nuts – 2tbsps
- Raisins – 10
- Bay Leaves – 2
- Cinnamon – Small Piece
- Cloves – 2
- Caraway Seeds – 1/2tsp
- Big Cardamom – 1
- Black Pepper – 7
- Ghee – 1tbsp
- Sugar – 1/2tsp
- Salt – 1/2tsp (or to taste)
Method:
Take
rice in a microwave safe plastic bowl and wash it. Add 2 Cups (200ml) of
water
and soak for 30 minutes. Heat a pan and add 1tbsp ghee to it. When the
ghee is
hot add the raisins and fry. Fry till the raisins swell. Remove the
raisins
from the ghee and add cashew nuts. Fry the cashew nuts to golden brown
color.
Keep the raisins and cashew nuts aside for garnishing. After thirty
minutes,
add potato pieces, carrot pieces, capsicum pieces, green peas, sweet
corn,
sugar and salt to the soaked rice.
Take
all the spices--caraway seeds, big cardamom, black pepper, cloves,
cinnamon and
bay leaves in a bowl. Add these spices to the remaining hot ghee and fry
till
they splutter. Add this seasoning to the rice mixture. Mix with a spoon.
Place
this bowl in a microwave oven partially covered with a lid. Microwave on
high
power for 5 minutes and then on low power (30%) for 15 minutes.
After
10 minutes standing time remove from oven, stir and mix. Add the fried
raisins
and cashew nuts and serve hot.
While
the rice is cooking in microwave your house will be filled with a nice
aroma
making you feel hungry. It tastes excellent when served with any Paneer
preparation as side dish.
