- Rice – 1/2Cup (120gms)
- Onion – 1 (70gms)
- Spring Onions – 2 (60gms)
- Cinnamon – Small Piece
- Cloves – 2
- Cardamom – 1
- Cumin Seeds – 1/4tsp
- Cashew Nuts – 3
- Raisins - 5
- Oil – 2Tbsps
- Water – To Cook Rice (1 1/2Cups—350gms)
Peel and slice onion. Wash and thinly slice the white bulbs of spring onions. Chop the spring onion greens and keep them separately.
Break cashew nuts into small pieces.
Heat a pan and add 1/2Tbsp oil and heat it. When oil is hot add cumin seeds, cinnamon, cloves and cardamom and fry for few seconds and add washed rice. Fry the mixture till rice becomes dry and starts moving freely in the pan---by that time the oil coats each grain of rice and they move freely in the pan. Transfer the rice mixture to a rice cooker bowl and add water and salt and mix well. Place the rice cooker bowl in rice cooker and cook rice till done. Remove the rice cooker bowl from the rice cooker and keep it aside for 5 minutes.
Heat a pan and add remaining oil and heat oil. When oil is hot first add raisins and fry till they plump up. Remove raisins from the pan and add cashew nut pieces and fry stirring till they turn golden in color. Remove fried cashew pieces and keep them along with fried raisins. Add sliced onions to the remaining oil and fry stirring continuously on high flame till they turn slightly golden in color. Then add the sliced spring onion whites and fry till they turn translucent. Then lower the flame and add the cooked rice mixture and mix gently. Add the fried cashew nut pieces and fried raisins and mix well. Finally before turning off the stove add the chopped spring onion greens and mix gently---the heat in the rice JUST softens the spring onion greens while retaining some crunch and nice color. Transfer the prepared rice to a serving rice platter and serve hot with any gravy dish.
Points To Notice:
Cooked rice grains would appear long when rice is cooked in a rice cooker. Add water as per requirement while cooking rice in rice cooker.
Fry washed rice till dry in oil so that each grain gets coated well with oil and this makes the rice separated while cooking in rice cooker.
Fry onion slices till they turn slightly golden in color and then add spring onion whites and fry till they turn translucent---by that time the onion slices turn slightly brown in color and this gives the natural sweet taste to this rice.
Do not cook the rice after adding the spring onion greens as they may lose the crunch and bright green color.
