This is a Text Recipe, not a Video. Due to commitments on home front and paucity of time it is becoming difficult to make videos of all known recipes. If I have to make a video only before I’m to share these recipes, it is likely to take considerable time. Meanwhile there is also an urge to share these recipes for the benefit of my viewers. These recipes are prepared, perfected and tasted at home. Hence they too carry the same commitment and conviction as in videos, while I share them with you. As and when these text recipes are converted into videos, the above photograph would be replaced with its video. Enjoy!!!

Recipe Text

Ingredients:

  • Maida – 85gms (1/2Cup - Slightly Heaped)

  • Cocoa Powder – 15gms

  • Baking Soda – 1/4tsp

  • Powdered Sugar – 45gms (Little Less Than 1/3Cup)

  • Unsalted Butter – 60gms (Butter Kept At Room Temperature)

(Online Conversion utility to convert Gms to Cups & Temperatures etc)

Preparations:

To maida add cocoa powder & baking soda and mix well---If necessary sift these ingredients.

Preheat oven at 130oC for at least 15 minutes.

Method:

Take a mixing bowl and add unsalted butter. As the butter is kept at room temperature it would be easy to mash it using a fork. To this softened butter add powder sugar and mix well till sugar is well dissolved in the butter. The butter mixture should appear creamy and light. To this butter mixture add maida mixture and mix well. Using fingers & mix the ingredients till it forms soft dough---do not knead the dough---just mix it to bind. Do not add any extra liquid to the dough mixture---If mixture appears dry, sprinkle few drops of milk & bind the dough.

Take a baking tray and keep it near---no need to grease the tray to make cookies. Take a cookie press and fix with a pattern plate. Fill the mould with sufficient dough and fix the plunger. Press cookies on the baking tray at sufficient distance. Fill the cookies press with remaining dough and press cookies and arrange in the baking tray. Wear mittens and carefully place the tray in the preheated oven and bake at 130oC for 20 to 25 minutes or till done. Carefully remove the tray from the oven and keep it aside for 5 minutes. Transfer the cookies on to a wire rack and cool completely. After removing from oven the cookies appear soft to touch. On cooling the cookies become crisp. Once cooled completely transfer the cookies to an airtight container, cover with a tight lid and store in a dry place.

Points To Remember:

Chocolate lovers like the slightly bitter taste of cocoa powder---If not….adjust the measurement of cocoa and maida to get the taste of one’s choice.

Use butter which is kept at room temperature—it helps in binding the dough easily.

It is always advisable to measure the ingredients by weight than by volume.

Preheating oven before baking is very important to maintain the temperature inside the oven. Temperatures and baking time varies from oven to oven depending on the capacity of the oven. So it is advisable to fix the temperature and baking time of the oven one is using by trial and error method by observing while baking. Once done it becomes easy to bake irrespective of the time and temperature mentioned in any recipe.

If using a small OTG then increase the temperature to 180oC and bake. Here I have used a 40 liter oven, so I have baked cookies at 130oC.

A fan operated oven bakes the things evenly—we get even browning whether it is a cake or a cookie. Preferably if the fan is behind rather than in the side or top it works better. Again with trial and error method one can easily fix temperature and time of baking irrespective of the position of the fan. So try and achieve.

Mix butter and sugar till creamy and light. When butter is at room temperature it mixes easily. Similarly if powdered sugar is used it dissolves quickly and eases the mixing process.

Use cookie cutters and get different designs for cookies. Cookies may be baked without giving any designs also---make small balls of the dough and flatten them slightly between palms and arrange in the tray and bake---just they look plain.

Once the cookies are baked, remove the tray from the hot oven immediately as the heat in the oven makes the cookies over bake. As soon as removed from the oven, cookies appear soft to touch. So keep them aside in the tray itself for 5 minutes to make them slightly firm so that it becomes easy to handle. But remember to remove them from the tray while they are still warm. Cool cookies completely on a wire rack and observe that they become crisp. When cookies are cooled on a wire rack, air passes from all sides and they cool quickly.
