This is a Text Recipe, not a Video.  Due to commitments on home front and paucity of time it is becoming difficult to make videos of all known recipes.  If I have to make a video only before I’m to share these recipes, it is likely to take considerable time. Meanwhile there is also an urge to share these recipes for the benefit of my viewers. These recipes are prepared, perfected and tasted at home. Hence they too carry the same commitment and conviction as in videos, while I share them with you. Recipe Text


    Ingredients:

    • Potato Pieces – 1/2Cup (100gms) {Cubes Of 1 Potato}
    • Green Peas – 2Tbsps (30gms) {Frozen Peas}
    • Sweet Corn – 2Tbsps (30gms) {Frozen Corn}
    • Carrot Pieces – 1/4Cup (35gms)
    • Onions – 2 (75gms) {Chopped Onions – 1/2Cup (70gms) }
    • Green Chilies – 4 (Spicy Variety)
    • Chopped Coriander – 2Tbsps
    • Turmeric Powder – 1/8tsp
    • Red Chili Powder – 1/8tsp
    • Garam MasalaPowder – 1/2Of 1/8tsp
    • Salt – To Taste (1/2tsp)
    • Cumin Seeds – 1/2tsp
    • Oil – 1 1/2Tbsps
    • Water – As Required (15ml)
    (Online Conversion utility to convert Gms to Cups & Temperatures etc)

    Preparations:

    Thaw green peas and sweet corn. Wash and peel potato and cut into cubes. Wash carrot and cut into cubes. Peel onions and chop them. Wash and finely chop green chilies and coriander leaves.

    Take a microwave safe bowl and add potato pieces, carrot cubes, green peas and sweet corn and add 15ml water. Place the vegetables bowl in microwave oven and cook on high power for 7 minutes.

    Method:

    Heat a pan and add oil and heat oil. When oil is hot add cumin seeds and allow them to splutter. Then add chopped green chilies and fry for few seconds till they turn slightly crisp. Then add chopped onions and fry stirring till they change color slightly. Now add cooked vegetables and fry for few seconds till they are dry and nicely coated with oil. Then add salt, turmeric powder, red chili powder and garam masala powder and mix well. Fry curry stirring for a minute or two and add chopped coriander leaves and mix. Transfer the curry to a bowl. Use this curry for stuffing in vegetable puffs, samosas etc. Serve this curry as an accompaniment with puri, paratha or roti and it also goes well with plain rice.

    Points To Observe:

    Vegetable measurements are given only to help as a guideline --- little more or little less quantities does not matter---only add salt and seasonings as per requirement.

    Onions give natural sweetness to the curry.

    A curry requires salt and chili powder with some amount of spices to become tasty. With little ingredients and less spices this curry gives a nice taste.

    This curry goes well when stuffed in dishes like puff pastry, spring rolls or samosas.
