To
make Dahi Sev Puri, it includes two parts:
- Potato Mixture
- Making Dahi Sev Puri
Potato Mixture:
Ingredients:
- Boiled
Peeled & Mashed Potatoes – 500gms
- Roasted
Cumin & Red Chili Powder – 1 1/2tsps
- Salt
– To Taste (1tsp)
- Grated
Ginger – 1tsp
- Chopped
Coriander – 2Tbsps
Method:
Take
mashed potatoes into a bowl and add roasted cumin & red chili powder, salt,
grated ginger and chopped coriander. Mix all well. The potato mixture is ready
to serve with dahi sev puri.
The quantities mentioned here may be used as basic guidelines
and can be increased or decreased according to taste.
Making Dahi Sev Puri:
Use
crisp puffed puris for making the dahi sev puri. Remember that immediately
after preparing it should be consumed—or—make it just before eating. For making
this dish we need:
- Puris of Paani Puri
- Potato
mixture
- Chat chutney
- Sweet sour chutney
- Smoothened
curd
- Thin Sev (Sanna Karappoosa)
- Finely
chopped onions
- Chopped
Coriander
Just
before serving see that all the above ingredients are ready. Keep the above ingredients
all at one place and start serving.
Let
us learn making with one puri:
If
you observe the puffed puri, the surface of one side will be thick and the
surface of other side will be thin. Hold a puri with left hand and make a hole
with right hand thumb on the thinner surface. Now start filling the puri with
the above listed ingredients (no measurements required add them as per Taste).
First add the potato mixture, followed by chopped onions, sweet sour chutney,
chat chutney, smoothened curd, thin sev and chopped coriander. Serve at once.
While eating place the entire puri at one go into the mouth and have a bite.
When we have the bite the tastes mix in different proportions in the mouth
giving an enjoyable feeling. Do not wait after preparing the dahi sev puri--
eat right away—otherwise the puris lose their crispness and do not taste good.
Points to Remember:
Usually
boiled, peeled and cubed potatoes are used as potato filling in the puris. But
that way the potatoes taste bland. So make the potato mixture as shown above
and use it as a filling for better taste. The grated ginger along with the
flavor of roasted cumin powder gives a good taste to the potato mixture.
If
desired add some chat masala, red chili powder or any spice powder you like to
the potato mixture. If desired also add soaked and boiled chickpeas to the
potato mixture. But the ingredients shown here are sufficient to bring a good
taste. Only the quantity of the potato mixture may need to be increased as per
requirement.
Make
hole in the puri on the thin surface only. The thick surface will hold the
ingredients for few seconds without becoming soggy.
