Gayatri

Happy Ugadi.

I am Jennifer Kumar and I am so excited to find your channel! I found it by searching for ugadi pachadi and got to the 8th page your recipe was there!!

Oh my gosh you have done such a fantastic job. I am an American married to an Indian. Before I got married I lived in Chennai for two years. I had got to acquire a good taste for Tamil vegetarian cooking and when I came back to US before meeting my husband I started to learn cooking on my own and from friends. I love your channel. Though I don't know Telugu I know you have your blog in English. I have seen already four or five topics. So inspiring. You are so creative with the telling of the recipes. I like to hear the Telugu though I don't understand it.

I may write more doubts to you but my first doubt is with the idli patra. How to use this implement? Does the whole contraption go directly on the stove or in the rice cooker? Can it be used on an electric stove? How do you steam idlis in a rice cooker? Does it take less or more time than in a pressure cooker? Here I make idli dosa quite often. Just last week finally got the butterfly mixie and the dosa/idli batter is heavenly. But the problem is the pressure cooker on the electric range takes too much time to heat. By time all is done it has taken more than 30-40 minutes to steam the idlis. It should not take so long. I want to find an easier way. I have seen idli pan with holes too. What would you make in this? I know few Kerala dishes and we have made puttu in that.. anything like that?

I have a doubt..Regarding your post at kitchenaids

I really like it very practical. I am curious- can I have permission to reprint your article on two of my blogs-

http://shakahaari.blogspot.com/

http://www.alaivani.com

Let me know what you think! I can post the videos and text just like you have it.

Thanks soooo very much for sharing your talents with the world! :)

Jennifer Garu,

I am thrilled to meet you for the simple reason, your comments and observations are sincere, especially for the efforts made by you to see my videos in telugu though you do not understand telugu.

The idli patra goes directly on to the stove. For further details please visit my Idli Recipe page.

I dont have an electric stove. I put the idli patra directly on the gas stove. I put around 500-700ml water which takes about 10 minutes to reach boil and produce steam. Thereafter it takes 7 minutes for the idlis to cook. The susequent batches will be faster, but you need to check the quantity of water before each fresh batch. May be you are putting more water for which it is taking longer time to produce steam.

As regards using the content of my website i request you to kindly go through http://www.gayatrivantillu.com/articles/bhikshaam-dehi

I would be happy if you post an acknowledgement and a link to my website on your blog at the place where you refer the text and videos.

Lahari Garu,

Mostly lemon must be culprit. Try to take a fresh one and squeeze the juice gently. Take care that your hand doesn't touch the juice, because some times while squeezing the rind also has extracts with bitter taste that come on to our hands. Accidentally if we put our hands, we would be transferring the bitterness to the food item.

Some times due to excess dry roasting also bitterness comes. If the chillies are crisp you need not roast them

Chiatanya Garu,

Pl visit http://www.gayatrivantillu.com/icecream for details of the components. In US also they may be available as they are available in India in all super bazars or bakery stores.

I do prepare Ice-cream with Paneer. Calorie conscious people prefer this recipe. I would be hosting it in near future.

CMC and GMS are used in Commercial Ice-creams also. If you are avoiding commercial ice-creams during pregnancy, I think you should avoid making it at home too. I cannot comment on their safety aspects.

Dear Mrs. Sharma,

Namaste, I am Radha. I just want to leave a quick line and a big applause for your great site..It simply is awesome and the way you have explained your recipe is so simple, and logical, an ameture cook would be encouraged to step into the kitchen..Here I am struggling to make more vegetarian choices over meat, as we are now sick of eating meat! I live in Melbourne, Australia and I guess I found one can't go wrong with meat recipes as to use the ready made masala's available. I hope to come back often on to your site for your lovely recipes.

Once again Thank you very much!!

Radha

p.s: Did I say your site is beyond just recipes? It is a mirror to your great persona and made me feel as if I have known you for a long time.

Hello gayatrigaru i am priya

why are you avoid red chillies in most of your tiragamuta.any perticular reasone on that.

thanks,

priya.

November 28, 2008 2:15 PM

Gayatri Vantillu said...

Hello Priya Garu,

Chillie products in limited quantities are good for heart. Therefore I try to put them into dishes in a paste form or powder form so that family members cannot discard while eating. Whole red chillies are easily identified and discarded while eating. Similarly if that one red chillie is chewed inadvertently its consequences are known to us.

Among the chilli products also my order of preference is green chillie paste, chillie powder and whole red chillies. The reason is - In India, while growing chillies farmers use lot of pesticides. There is a pesticide residue on the red chillies which we cannot wash before using in the curries. In the trade off between good and bad for health - green chillies score more compared to red chillies and hence you find the bias towards green chilli paste.

Not in all dishes green chillies work - like sorakaya iguru koora, Potlakaya koora, Beerakaaya Koora etc. We have to put red chilles only.

Bye

Hello Pratima Garu,

Thanks for your mail. Let me share a few secrets, as to why in Gayatrivantiilu, the style is photo shoot mode only. Its a one woman show where I am the Chef, Director,Photographer, Playback, Sound Mixer, Editor and what not.By adopting the photo shoot mode, I am literally able to take the camera with my left hand into the frying pan, while the right hand is busy cooking. I am able to clearly show the action in the frying pan .A movie camera cannot go as close to the frying pan as a still camera does, because the water vapour blinds the lenses. In addition, by adopting this mode, my viewers attention is focused on the recipe and its ingredients. It doesn't get distracted to what I wear, how I look, what interior my kitchen has etc. Thus, I feel photo shoot mode is more functional and less fashion oriented. It doesn't mean I am against video shoots. I don't have a movie camera and don't feel its necessity for Gayatrivantillu.

Everday, I literally race against time, to make one recipe. Ofcourse I enjoy it. I definitely have in line pidivantalu and chirutillu to be hosted. It would take some time and I hope you would bear the delay

I only hope, all these people read my article on Bhikshaam Dehi at http://www.gayatrivantillu.com/bhikshaamdehi and have a soul search as to whether they are depriving some revenue to the underprivileged, because they do not have links to SOS and Akshaya Patra web-sites

I had been to your colourful website / Blogs. They are very attractive. You are dealing with a variety of topics and the blog is a boquet of recipes from other sites also.

You may provide my web link of www.gayatrivantillu.com but not host my recipes and video on your blog, because I would like to retain the exclusivity. I would be able to provide a link to your website, if you contribute a video recipe to my Porigintivantalu

I propose to host our correspondence in my blog which would provide the text llink right away. Eventually they would be moved to manamaatalu

Thanks for your e-mail.

Hello Gayatri Garu,

I am a student pursuing Masters in US. I am extremely fond of food. I have recently browsed your site and thoroughly enjoyed your recipes. But I have a small question. I have found all your receipes made with good amount of oil. This might make a dish tasty. But Is there some other way to prepare tasty food with less oil?

August 5, 2009 5:24 AM

Gayatri Vantillu said...

I was having an hunch as to why this question is not yet posted by my viewers and it has come atlast!!!

While showing oil in the "ingredients" I show a glass bowl full of oil though I narrate it as 3 or 4 or 5 teaspoons of oil. Often the picture registers in the minds and viewers are likely to mistake that I am putting that much oil in the curries.

The reality is if one puts 3 or 4 teaspoons of oil in a pan, it just coats the bottom of the pan barely sufficient for frying the seasoning. The very purpose of using micro-wave is to reduce the oil consumption to almost half or even less!!!

Its difficult to show 4 teaspoons of oil in a bowl, because in photos its not clear and viewers are likely to mistake that an empty bowl is being shown without oil. secondly while transfering it to the pan during cooking half of it stuck to the container. Thus the viewers are requested to go by the narration and not the image of "OIL" in the ingredients while watching my recipes.

My entire effort is on LESS OIL COOKING but not on oil less cooking!!! If some of viwers can suggest other practical methods in reducing the oil furhter they are requsted to share the same on the blog for the common benefit.
